【摘要】：兩漢時期,國家統(tǒng)一,社會安定,經(jīng)濟(jì)繁榮,這一時期是中華民族政治制度與風(fēng)俗禮制形成、定型的關(guān)鍵時期。隨著封建土地制度的確立,兩漢農(nóng)業(yè)迅速發(fā)展,糧食產(chǎn)量增加,刺激釀酒業(yè)的繁榮。飲酒之風(fēng)盛行,釀酒業(yè)發(fā)展迅速,無論是釀酒技術(shù)、飲酒器具,還是酒的經(jīng)營與管理,較之先秦時期都有了很大的發(fā)展。以致“通邑大都,酤一歲千釀”。作為漢代手工業(yè)部門之一,釀酒規(guī)模主要有宮營、私營和家庭自釀。正所謂“酒者,天之美祿,帝王所以頤養(yǎng)天年,享祀祈福,扶衰養(yǎng)疾。百里之會,非酒不行”。酒已然滲透到社會生活的方方面面,成為皇室、貴族、普通百姓,甚至少數(shù)民族日常生活中不可缺少的一部分。宴飲時常伴有歌舞、行酒令、飲酒賦詩等活動以助興。漢代飲酒禮俗在繼承以前的基礎(chǔ)上進(jìn)一步發(fā)展。首先,在祭祀活動中充當(dāng)重要角色,可以說“逢祭必有酒”,人們通過用酒食等美味敬獻(xiàn)神靈及祖先,以獲得他們的保護(hù)。其次,叔孫通制定宮廷禮儀,規(guī)定在舉行宴飲活動時,要遵守一定的禮儀。飲酒座次、飲酒步驟及飲酒順序等方面都有嚴(yán)格要求。明帝時,初行“養(yǎng)老禮”,這是對鄉(xiāng)飲酒禮的繼承與發(fā)展。漢代的飲酒禮俗反映漢代尊卑有序,親疏有別的傳統(tǒng)觀念。各個時期,政府對酒的管理政策不盡相同,兩漢時期的酒政主要有禁酒、榷酒與稅酒,三者既有聯(lián)系,也相互區(qū)別,實(shí)行的原因及達(dá)到的效果各異。酒在兩漢時期幾乎滲透到社會的各個領(lǐng)域,包括政治、經(jīng)濟(jì)、軍事、藝術(shù)、思想文化等方面,酒文化在兩漢時期已經(jīng)初步形成完善而系統(tǒng)的體系,對后世影響深遠(yuǎn)。

The prevalence of drinking and the rapid development of the wine industry, whether it is wine technology, drinking utensils, or wine management and management, compared with the pre-Qin period has a great development. As a result, "Tongyi most, a year-old thousand-year-old wine." As one of the handicraft departments in the Han Dynasty, the scale of wine-making is mainly Miyangying, private and home-brewed. " Wine has permeated all aspects of social life, becoming an indispensable part of the daily life of royalty, aristocrat, ordinary people and even ethnic minorities. Banquets are often accompanied by singing and dancing, alcohol, poetry and other activities to help. The drinking ceremony and custom of Han Dynasty were further developed on the basis of inheritance. First of all, to play an important role in the sacrificial activities, we can say that "every sacrifice must have wine", people through the use of wine and food and other delicious offerings of gods and ancestors to obtain their protection. Secondly, Shisun Tong formulated court etiquette, stipulated that when holding banquets, must abide by certain etiquette. Drinking seating, drinking steps and drinking order have strict requirements. Ming emperor, the first practice of "pension ceremony", this is the inheritance and development of rural drinking ceremony. The drinking manners and customs of Han Dynasty reflect the order of order and other traditional ideas. During each period, the government's policies on wine management are different. During the Han Dynasty, there were mainly prohibition of alcohol, discussion of wine and tax wine, the three are not only related, but also different from each other, the reasons for implementation and the effects achieved are different. Wine almost permeated every field of society in the Han Dynasty, including politics, economy, military, art, ideology and culture, etc. In the Han Dynasty, wine culture had formed a perfect and systematic system, which had far-reaching influence on later generations.
